Prime Rib of Beef ~ A Taste of Scotland.

On Wednesday November 12, Lees Wine and Spirits hosted a Single Malt Scotch tasting event, compliments of Tim and Ben from Horizon Beverage. Complete with a three course food pairing consisting of cheeseboard with oatcakes, prime rib of beef cooked in a real wood fired oven, Colcannon, Scottish trifle and cigars, this event was a Sell Out but don’t despair, another one is in the works. I can’t wait to cook another 25 pounds of beautifully trimmed and dry aged beef on my mobile wood fire oven.

Any home cook can reproduce this recipe in their home oven with a bit of patience and confidence. Trust me, it is much easier than it might seem. Granted, most of you don’t have a four foot diameter mobile wood fired oven at your disposal, but that shouldn’t stop you from preparing this fabulous piece of beef to perfection in your home oven.
